There’s nothing like it, is there? The lure of a golden brown succulent chicken displayed whilst it rotates behind the glass in the commercial rotisserie.

There have been studies that suggest that this visual mouth-waterer increases impulse sales of food by over 55% compared to a menu description or picture.

So how do you decide which one could be right for your business?

There are a few simple things to consider, and we’ll explore those briefly here:

Commercial Rotisserie Size and Capacity

You’ll need to determine the best place for the commercial rotisserie unit not only from a marketing point of view, but also care must be taken as to the best size for that particular area. Is this to be a counter-top unit or a larger, free standing type with a heated display/holding cabinet beneath?
Sizes tend to range from 940mm width x 845mm height, right up to units that are 1.8M high.
The smaller units start from 2 spit versions (for around 6-8 birds) and the larger models can go as high as 30 birds.
Another quick thought: Horizontal rotisseries are the ones to go for, as the birds above baste the birds below!

Gas or Electric Rotisserie?

Again, location of the rotisserie may determine whether gas or electric is most suited, but if you have a choice, then gas would be easier on the pocket from a running cost point of view, and also bear in mind that due to higher kW ratings most of these units can’t be connected to a 13A socket, so if it’s not already at the location then suitable cable will need to be installed.
Electricity does also have its advantages which should not be overlooked:
Electric rotisseries are easy to control as the number of elements ensures a very even heat distribution across the cook area, plus cleaning is easier as the most of the internal panels are removable.

Commercial Rotisserie Accessories

You may wish to cook food other than chickens in your rotisserie, so if that’s the case, make sure you go for a brand that offers a choice of accessories such as clamp baskets, sheep or pig spits etc.
